Ricciarelli: lemony Italian almond cookies

These snowy almond cookies have a special cosy feel to them. I only discovered them recently, and was instantly conquered.

They have only 5 ingredients, are gluten-free and dairy-free! Can any festive treat do better? I often hesitate when I wish to bring cookies as a gift, because unfortunately severe food allergies are more and more common. It’s not easy to find a recipe for cookies that are festive, delicious and safe for the gluten or dairy intolerant people. These are the solution I had been looking for😊

Ricciarelli cookies are delicious sweets you can serve with a cup of tea or coffee. They are very easy to transport so they also make a great small gift. Here are some occasions what Ricciarelli are perfect for:

  • A teacher’s gift.
  • A little something to bring along when going to visit family.
  • A lovely attention to drop off to your neighbors.
  • A lovely hostess gift that your guests can bring back home.
  • A sweet after school snack for the kids.

So without further ado, here’s the recipe:!

Ricciarelli Cookies Recipe

Inspired by Silvia Colloca

Ingredients

  • 300g (2,7 cups) ground almonds
  • 250g (1,25 cups) sugar
  • 2 egg whites
  • Freshly grated zest on one lemon
  • Icing sugar for coating the cookies.

Instructions

Pour the sugar into a bowl.

Grate the lemon zest directly into the sugar. This way all the flavors get into the dough.

Add ground almonds and egg whites and mix everything together. You can do that with a wooden spoon but actually it’s easiest to use your hands.

Squish the dough into small logs (about 2-3 cm / 1 inch long). Roll the logs in icing sugar and place them on a parchment covered baking sheet.

Bake 10 min at 180C/350F and you’re done.
