Light and airy meringue cookies that melt in your mouth are the perfect sweet treat idea. These ghost-shaped Halloween snacks are one of my most popular creations. The kids adore them and the biggest plus is that they are also crazy easy to make.

Meringue might seem a bit scary to make, but hey, ‘tis the season to face all our fears. There are so many stories about how we can fail the meringues. But honestly if you follow my instructions, you cannot fail. It is a seriously simple and completely foolproof way to make these cookies. Also smaller meringues are easier to bake correctly than bigger😉.
Make some spooky cookies to your kids or to your Halloween party guests and enjoy being the Halloween snack queen.

Meringue Ghost Cookie Recipe
Ingredients
- Three egg whites (medium sized eggs)
- 170 g of sugar 3/4 of a cup
- 1 teaspoon of vanilla / one pack of vanilla sugar
- Half a teaspoon of vinegar or a squeeze of lemon juice.
Instructions
Beat the egg whites (in a standup mixer or by hand) until firm peaks form.
Add sugar little by little.
Add vanilla and vinegar or lemon juice.
Keep whipping until the meringue is glossy, holds stiff peaks and you can’t feel the sugar any more while rubbing between two fingers.
Heat the oven to 95C/200F.
Pipe small ghost-shaped meringue cookies on two parchment covered baking sheets.
Bake for 90-120 minutes until the cookies peel easily off the parchment paper.
Let cool.
Use a black edible marker to draw eyes and a screaming mouth on your ghosts.
Enjoy the kids’ cries of delight when they discover these!

I made the ghost meringues today for our Halloween treat. They turned out very well. Mine only took about 75 minutes to cook. I wil have to make your birds nest meringues for Easter. They look so festive. Thanks for the recipe!
