How about a kids Easter crafts day? A baking project is a fun (and educational) activity that your kids will definitely love! Plus it also covers the snack prep!! A win-win in my book😉. Take these bunny sandwich cookies: a wonderful after school snack and they’re cute enough to make a lovely teachers gift! Perfect, wouldn’t you say?

Ok, I know that half of us are in a lockdown. In our region of France the 3rd lockdown started last weekend, although the schools stay open (thank God!!). We might have to keep to a smaller company than usual. No family get-togethers or Easter play dates with friends this year. But all of the craziness around us shouldn’t mean we don’t get to celebrate the holidays!
I have to tell you something. I’m really not good at playing. Even as a kid I was a bit uncomfortable with games. I suppose it’s the conflict aspect that is so often present in them: I’m a notorious conflict-avoider… I definitely preferred reading or creating something. Reading was my way of getting lost in my imagination. Baking, doing art projects with mom or woodwork with dad – these activities had a direct result!
Now as a parent myself, I really try to play with my kids, but I still by far prefer creating something. Hence, the regular baking projects!
The one thing to remember when organizing a baking project is to embrace the mess. You should definitely not stress about things occasionally spilling over – this is supposed to happen, that is how we learn. Just try to keep all the action in an easily washable area and all will be well😊
These sandwich cookies are really very easy to make. You can use any sugar cookie dough (my foolproof recipe works wonderfully here).
After baking and cooling the cookies the fun part begins! Powdered sugar storm followed by jam avalanche! Well the vividness of the action mostly depends on the age of your little crafters. My helpers are 6, 4 and 2 so it’s definitely stormy in our kitchen 😄. But quite honestly, a powdered sugar cloud brings a smile on any kids face, no matter the age (to all mamas, remember: embrace the mess!).
So organize an Easter cookie craft day and have fun with your little ones!

Easter Bunny Sandwich Cookie Recipe
Ingredients:
For the sugar cookies:
- 250 g (1 cup) of butter, softened
- 170 g (1 1/2 cup) of powdered sugar
- 1 tsp of vanilla extract (or 1 pack, about 10g of vanilla sugar)
- 1 large egg
- 400 g (3 1/2 cups) of flour
- 100 g (3/4 cup & 1 tbsp) cornstarch
- 1/2 tsp of salt
For dusting:
- 2-3 tbsps of powdered sugar
For the filling:
- A few tbsps of apricot jam
- A few tbsps of raspberry jam

Instructions:
First prepare the cookie dough.
Cream together butter, sugar and vanilla.
Add the egg, beat until smooth.
Mix together flour, salt and cornstarch.
Add the dry ingredients to the wet ones and mix together.
Knead softly until smooth and holds together.
Flatten the dough in a disc, wrap it in plastic film and let rest in the refrigerator for at least half an hour and up to three days.
For baking heat the oven to 180C/ 350F.
Roll out the dough about 5 mm (~1/4 inch) thick.
Use an egg cookie cutter to cut out a paired number of cookies. Take a small bunny shaped cutter and make bunny-shaped holes in half the cookies.
Place cookies on a parchment lined cookie sheet and bake for 7-10 minutes at 180C/350F. Keep a close eye on the baking, you want the cookies to be baked but not colored.
Take cookies out and let rest a few minutes on the baking sheet before transferring on a wire rack to cool down completely.
Place all holey (yes, it’s a Harry Potter inspired pun – gotta love the Weasley twins😁) cookies on a cutting board and dust generously (and evenly) with powdered sugar.
Now it’s time for assembling the sandwiches! Take one full cookie, slather with your jam of choice and place a sugar dusted bunny-windowed cookie on top.
Place on a pretty serving plate, put some flowers on a table, serve tall glasses of juice to the kids and get the Easter party going!
