Here’s a delicious way to clean out your fridge by preparing a healthy make-ahead meal. This stuffed tomatoes recipe is great for using all your leftover cooked meats – a perfect addition to big family meal ideas list.
Having a big family means preparing biiiig meals and then having RIDICULOUSLY tiny leftovers. Like one spicy porc chop. Or two BBQ sausages. Or three meatballs. Two slices of ham. You get the idea😂😂
Let me introduce to you the perfect clean-out-the fridge meal: stuffed tomatoes! They are an easy meal that most everyone likes and it’s all in one : meat and vegetables (yes I know, technically tomato is a fruit but still) are all served together – no sides needed!
Another really big plus: it can be made in advance and kept in the fridge for up to two days before baking. Talk about a great meal prep dish😉
Stuffed Tomatoes Recipe
- 6 large tomatoes
- 500-600 g ground meat in total consisting of:
- Leftover cooked meat (half of a cooked steak, ham slices, pork chops, chorizo sausage, whatever you have in the fridge)
- Ground meat (beef, porc, turkey, chicken, as you like it)
- A few slices of stale white bread
- Half a glass of milk for soaking the bread
- 2 eggs
- Salt, pepper, dried garlic
Mix all of your leftover meats up in a grinder or a small kitchen mixer (I use the one I bought for making baby food).
Add the ground beef/porc/turkey/chicken.
Soak the stale bread in milk.
Add the bread, the eggs and seasoning to the the meat and mix everything well together.
Remove tomato cores and seeds. Keep the little tops to make cute hats to your stuffed tomatoes.
Fill the tomatoes up with the stuffing – don’t hold back, they are best when there’s a lot of stuffing.
Bake at 180C/375F for about 35-45 minutes (depending on your oven and the size of the tomatoes).
