The different textures in this lovely summer salad are wonderful: the pop of quinoa, the crunchy cucumber and bell pepper, the soft and salty feta bites, the crispy apple chunks! It is also delicious and fresh and fulfilling. A perfect lunch idea!

A crunchy quinoa salad with feta and apples

Salads are my real love in the summer, but it is quite easy to stay stuck in the comfort of preparing the one or two go-to recipes all the time. I’m making a conscious effort to try unconventional combinations in my salads from time to time and the results are amazing quite often if I dare say so myself.

There should be no quantities dictated for this style of salads in my opinion. You have ingredients that go together and bring out the best in each other. Everyone can decide by themselves how much of something they wish to add. Or how much of something they have around at their place. In the ingredients section I noted the approximates of what I put in there last time, this way you get a general idea of the proportions.

A Crunchy Quinoa Salad Recipe

Ingredients

  • ~ 175g (~1 cup) of cooked quinoa
  • 1 cucumber
  • 1 apple
  • 1/2 red onion
  • 1/2 red bell pepper
  • 140g (1 cup) canned corn
  • 140g (5 oz) feta cheese
  • Fresh herbs (I used green onions and basil)
  • Salt & pepper
  • Balsamic vinegar
  • Extra virgin olive oil

Instructions

Cook quinoa following the instructions on the pack and let it cool down (or use leftovers from last nights dinner like me😁).

Drain the canned corn.

Chop the herbs.

Chop all other solid ingredients into more or less similar sized cubes.

Mix everything together in a bowl, season with olive oil, balsamic vinegar, salt&pepper and serve.
