A crunchy, fresh and delicious salad idea with a lovely mix of textures and the most wonderful salad dressing.

I have come to absolutely adore this surprising combination. I had never even though about using zucchini raw in anything until testing it in this punchy salad. If you haven’t tried it either, do it now!
It is often in unexpected situations that we get inspired. This salad came to be because several years ago when I was listening to Hal Elrods podcast (also, if you haven’t read his book the Miracle Morning, you should!) he mentioned as a side remark that he had tried to eat more raw vegetables. The subject of the podcast was something completely different, but this idea sparked my interest. So thank you, Hal, for another good idea besides the tons of golden nuggets you have shared on the podcast😊.
I am not saying we should only eat raw foods. There are people that advocate a full raw diet, but as with all diets we need to be careful. Indeed cooking can sometimes remove nutrients or vitamins from fruits or vegetables, but it is also true that there are vegetables that need to be cooked for the vitamins to be able to be released. So there is no health miracle in consuming only raw food, but it is one of the ways of varying our diet which I believe to be necessary for our bodies!

Cucumber and Zucchini Salad with Lime & Hummus Dressing Recipe
Ingredients
- 1 cucumber
- 1 smaller sized fresh zucchini
- 1/2 red onion
- 2-3 tbsps hummus
- Juice of half a lime
- Fresh cilantro (or other herbs of your liking)
- A pinch of flaky sea salt
Instructions
Straight in your salad bowl stir together hummus, lime juice and salt.
Chop the red onion finely and add to the bowl.
Wash the cucumber and the zucchini. Slice both in thin half circles.
Stir everything together and your salad is ready to be devoured.
You can enjoy it as a side dish (it would go marvelously well with some grilled meat or fish!) or as a vegetarian main dish accompanied by a slice of buttered baguette.
